Window trim question

We just installed retrofit windows and there're gaps around the new windows. We prefer modern window trim which does not have molding cover the surrounding wall. I wonder is there any available casing products I can use to cover the gaps and look good? Flat vinyl trim looks okay but we prefer wood or non-plastic material. Thank you!

Are you planning on ripping off the wood stool (i.e interior window sill) that is already there?

Casing is a moulding, so I am confused by this? Typically drywall returns are done in new const and the drywall is installed in such a manner as it is brought directly to the window frame. Somewhat tough to retro fit without removing drywall, plus you have insert type windows so its a lot of vinyl plus the existing frame to attempt to cover.
