Can your electric panel handle what you want to do?

I put a kitchenette in my basement and did all you are considering except there is no stovetop. I have considered a little one burner countertop unit - electric, though I recently saw some induction ones which seem safer. Induction does require special cookware:

I have not added one yet simply because mostly everyone uses the microwave. I did my kitchenette on a tight budget. I used my cast iron kitchen sink, which had been replaced in a main kitchen refresh. I used the larger sink because I wanted the dishes washed on site - not carried upstairs and there is no dishwasher in the basement - so be sure to use a large sink, or install a small dishwasher.

Why do you want to cook in the furnace room?

Ha that is a great question Patricia - it's because I make the holiday of Passover and this would be used for that. It would also be used for my inlaws/parents when they come to town and stay in the guest room down there. The furnace room has a door and a separate space on an L where there used to be a washer/dryer and water basin - so it has the hookups already there.

rantontoo - yes my panel is literally right on that wall and has empty spots. so I can easily add a few.
