Custom kitchen sink?

Our current kitchen sink is cast iron with the porcelain glaze. We want to replace it with a granite/quartz composite. Our issue is the shape. From what we can see online and our conversations today with someone at Ferguson, it's a custom shape that normal manufacturers don't seem to make. As you can see in the picture, there's a cutout but it only takes up about half of the left bowl of the sink while most cutouts are more even and take up the entire side of the sink. On top of this, our cut out seems to be a bit deeper than normal. Does anyone have any experience with this, suggestions of who to contact for a custom sink? The person at Ferguson recommended we consider replacing the counter or seeing if they could just cut out a bit more of the granite but I think if we cut out more it would be wider (front to back) than the normal sink cutout.

Here are some rough specs:

31" long x 17 3/4 wide for the main part, the cut out is approx 10" long and the max width is 20".
