No retrievable castings in six months time

I have a four-level community of apparently thriving worms in a bin like this one, but I still don't seem to be seeing castings in the metal tray at the bottom of the setup.

A solid half or more of my compostable matter is coffee grains, and I wonder if this is just kind of camouflaging the castings?

Or possibly my bedding and food are just too densely packed, so that castings don't fall down?

If you have any experience with this or ideas about what to do, please let me know. It's enough that my scraps are going to feed living things, and it is fun to see them thrive, almost like they are pets. But I do have plenty of plants that could benefit from the castings, if only I could get at them.
