I am a fabricator. A shaped diamond tool for Ogee leaves a sharp corner at the top of the edge where it merges with the top surface. Sharp corners are much more vulnerable to chipping. We always blunt the sharp corner by hand unless the customer insists we do not. Soapstone is not a "chippy" material so if the corner is blunted and you are reasonably careful it should not be a problem.

oildryder is correct. If you can get an ogee with the rounded top you'll be fine, but don't let them drop the bit and get the 90. These chipped edges are notoriously difficult to repair. Big enough to see and feel; small enough to not take adhesive.

7 Month Update: Based on the helpful responses I received, I did move forward with the ogee edge on my soapstone counters. While it did add some additional cost, I couldn't be happier with the result. Like most, I did a lot of research on countertop materials before settling on soapstone and was very much aware of people's concerns about scratches and dings. I do find that the counter sometimes shows superficial marks, but they're easily handled with an application of mineral oil and disappear over time. Count me in with the people who are in Love with their soapstone countertops.
