What about using the same material as the dark counters on either side of the stove? Could be a cool look.

I can't tell from the photo put if te shiplap is wood get rid of it. Put up Cement tile backer and either tile or metal. Don't leave in buried either. The Wolf is going to throw a lot of heat and you have to keep combustible material at least 20" from the flame (read the building code!) If it's tile, you're OK Not too thrilled about the outlet placement for the same reason.

I have a 30" Wolf and we have the 10" stainless riser from Wolf. I like it even though I am not a huge stainless fan, and I have a more period look kitchen.
