I like the simple, farmhouse with whites. I do like the look of shiplap, maybe some brick, and wood accents. We do own horses so I would love to incorporate some of that as well. I would love to do this to the bathroom below and also something like this. I think we are getting the metal bed as well.

I would use simple white bedding with a quilt folded at the end of the bed.

Are you planning to use the same rug? If yes, then a rug closeup pic would garner better advice re: bedding and thoughts about an "accent" wall/color. Dimensions of space would help,too.

Brian, you sound like you have a pretty good idea what you want and that's half the battle! Don't know where to start? Start with the bed then build from there. Luckily you have a large walkin closet so you don't have to worry about furniture for clothing storage (dressers & chests of drawers). For example, at the end of the room opposite from the stairs, consider adding a comfy upholstered chair and make that area a cozy reading nook.
