Do you have pictures of your kitchen? That would help with any advice.

I did our kitchen remodel in F&B Blue Gray. It's more blue than gray, and the paint varies in location depending on light. My kitchen can look blue or green in photos. Anything can get dirty. White will show more dirt than a color. As far as finding your color, you need to look at samples in your home, in your light.

In my experience, any painted color will show dirt more than a stained finish.

You have very nice cabinets right now. I wouldnt paint them. I would however put some new hardware on them.
