Ratio sugar to prepared fruit for grape jam

I forgot to measure the amount of grapes I had before removing skins from pulp. I measured the skins and pulp by volume and weight before removing seeds and I measured the volume of pulp and blended skins after removing seeds, but I cannot figure our how much sugar I should use nor how big a batch I can make at one time. I have 10 1/2 cups of prepared fruit. Started with 6 cups of pulp with seeds weighing 3 lbs 10.5 oz. and 8 cups of skins weiging 2 lbs 10.3 oz. Not sure which measurements helps determine the amount of sugar. Also some recipes say to use lemon juice and some do not. Should I use lemon juice and how much?

Thanks for your help. I have made grape jam before but used a recipe. This year I thought I knew what I was doing and now I'm stuck.
