Thank you. It looks like there's not an exact product for this situation, so I will have to pick the ridge, corner, or edge flashing that will work the best.

I'm not sure I understand how the j channel will work, you need an outside closure strip for your panels and ridge/peak piece to cover it. A little overkill for a wood shed. Check with the company that made the roof panel, here is a detail from fabral:
