trying to seal white oak without turning it Amber

I am mid remodel and we are building a beautiful white oak floating staircase and pivot door. The wood looked amazing when natural, but now my contractor has sealed it/put laquer on it and it has gone really Amber. Is there anything I can do to return it to it’s more natural ‘white’ oak color which I loved?
