The color changes to stainless are not deep. They will scratch and you run the risk of not being able to replace a broken appliance with the same color, so I would eschew colored stainless for those two reasons.

Stainless so when one appliance breaks, you will be able to get another and not discover that the dark color you bought is now discontinued!

Stainless steel would be fine, but I like where your head was originally at with something different! That being said, I decided to forego the slate because I didn't want to be limited to GE appliances or beholden to that color if they stop making it, since they're the only ones. I ended up going with black stainless, but if you like the matte look, I'd consider the GE cafe line in matte white or matte black. Especially with the gold/brass handles; I think that could look really cool.

My refrigerator and dishwasher are stainless while my range and microwave are stainless with black accents (range top is black, microwave door is stainless and black). We originally started with a black refrigerator and have dark wood cabinets so it made the room too dark, and it really did look like a black hole. The stainless is much better.

Regular old stainless not special finishes . Easy to keep clean micro fiber cloth hot water with a bit of vinegar wipe in the direction of the grain not in circles takes no time at all . I even have some stailess cabinets in both my old kitchen and my new one.
