Agreed need more info. Also can your stove be moved? Is moving your plumbing an option at all or just prefer not?

Also what are the goals here: Are you needing a eat-in space? More cabinet space needed? More counter? On-the-cheap refresh or full-scale remodel? Budget? Obviously you are looking to replace cabinets - do you like the floor? the colors?

Looking for something simple and as least expense as possible. I was looking at some RTA shaker cabinets. Maybe a counter with stools eat in space, not pressed for eat in space rather have room for cooking. Definitely need more counter and cabinet space. Watching price but functional at the same time. That little cubby room can house the fridge if need be. Don't want to move plumbing and gas but if it makes life easier it can be moved. The door in the back is the back door to the yard. thank you

I feel like moving that door out of the middle of the kitchen and into that little room would give you some more space to work with, but only if you board up at least the left window. I think you could make do with the sink (unmoved or only plumbed over a bit) and moving gas line to the other side. Not cheap but hopefully more functional and usable.

I agree about closing up one of the windows. Is that possible? That small room might be good for a pantry.

closing up a window wouldnt be to bad, moving the door is too intense at this moment.

If you closed up just one window it probably should be the one next to where the fridge is now. Then you could turn the fridge and mobe it into the corner (with a spacer to allow for opening) then add a counter around that post, with lower cabinets and a cabinet over the fridge. Add upper cabinets or open shelving above.

Keep the layout on the other side essentially the same though I might see if you could enlarge the opening slightly to the next room (I’m guessing dining space since it looks like a China hutch on the wall) so you could finish the kitchen with another angled 10” cabinet so the stove is not right on the edge.

You will need to do your measuring and come up with a scale plan, but this is the basic idea.

Now, if you got really ambitious, you could change out the window currently closest to the door with the one from the other side. It looks like the window closest to the door is lower. By switching out with that shorter one you are taking out anyway, you can add another small section of cabinet/counter partially under the window (but leaving room for the door swing)
