Absolutely do not use poured epoxy. It comes off, and when it does you have little choice but to re-pour. It’s vile stuff and you have a little one at home.

I love laminate. Cook’s is right on all counts. It can be more expensive than you think, even if your substrate is in great shape, because you have to have it professionally installed. Once it’s in, it’ll last for decades. If your quote comes in higher than you like, consider IKEA walnut veneer counters and just don’t cut on them without a cutting board. They can be installed DIY, and they’ll look good for a decade with little maintenance. They’ll be fine. Here they are in nancyk14’s kitchen.
