Jo Shaw welcome to the forum. I garden only a couple of hours north of birminham and actually work there so I am very familiar with your zone. At this time a year the only thing you could do for your roses is to clean the surrounding area, and spread cow manure (composted). I just buy some black cow in bags. This cow manure will slowly work around your roses to feed them for next spring. If you would like to do anything extra, you could mulch around the roses. In general roses don’t not need any special winter care in Birmingham, Al because you are already a zone 8. Adding fertilizer now would do more harm than good as the new growth would just get damaged in the cold weather. Do you know what kind of roses do you have? A picture would help. Have you seen them blooming? The pruning you need to do to maintain them depends on what kind of roses they are. All rebloomers can be pruned In late winter but the once bloomers shouldn’t. Ditto what Dianella said. Organics to feed the soil are always OK but don't give them fertilizer now going into winter. You don't want to encourage new growth that would be lost in any deep cold snaps. Wait until spring and after you do your spring pruning give them some good balanced fertilizer. You shouldn't need to do much winter protection in your zone. These sound like they've been in the ground for some years with out protection so they're probably pretty hardy.
