I just zapped a couple latkes that didn't fit in the freezer box for a visitor. She was delighted. Latkes are pretty forgiving.

I'd say do what you're used to doing (i.e., freeze), so you won't have to think about it during the madness.

We will get a big plate gifted like every year from our neighbor across the street. She does a massive amount...like every year. We have a few room temp right away! , heat a few in the oven. Freeze the rest time/meal planned...but love them straight from the freezer oven roasted. Christmas morning from the freezer. Rarely make my own but I do veg with sweet potato, golden beet, radish, green onion, zucchini . (greens like shredded Brussels)... hide head under table, lol..

Made ahead is so common and so good no mater the re-heat or not.

Fresh, duh, but like any potato dish, cold potato salad, mashed, it works for the love of the simple potato. Any temp.

Key to one of my 'dozen fishes' for Christmas. latcke bed for salmon. if I do that I will make for us one morning and make baby ones to freeze. (all recipe dish plans have another back burner)
