It's a bath room, because it has that bathing capability. I would do the two gang : ) Don't put a light between vanity and toilet. The room is only five by eight. Make certain you have adequate light over the vanity, and point it DOWN not up at the ceiling. Put two recessed in the middle of the room and a fanlight combo over the toilet. That will serve the shower as well, 99% of the time. Even with a shower curtain : )

I’d do 2 gang. We have smaller bathrooms and a 3 gang switch and it makes no sense to me.

You can never have enough lights, switches and dimmers!

I would do the shower one separately.

Put the sconce switch by the sink.

When hosting an event I leave the sconce dimmed and also dim the one in the shower. I have pretty iridescent tile in the shower, so the dimmed light highlights the shine of the tile.

We have 4 switches in our bathroom LOL! One for the main light (one bright flush mount ceiling light), one for the fan, one for the mirror sconce and one for some recessed 3W ledlights (we call it moonlight, as it's a bit blue and very pale).

But for a bathroom the size of yours, I'd say a double switch next to the door for the ceiling light and fan (no need to leave the light on when you want the fan to be on a little longer and vice versa) and a switch next/onto the mirror lights. One centered light on the ceiling is sufficient.
