Hi there, the best time to pick bananas, in my experience, is when they plump up and no longer have sharp ridges going lengthwise on the fruit. I have kept them on the tree after for several weeks and there is no degradation to the fruit in my zone. They eventually start to yellow up and that’s when I will definitely cut them down before the critters get to them.
