Not to be a downer, but if you plant fruit trees and don't harvest the the produce it will attract wild life and vermin depending on how you look at it. It will also encourage insects that at can make it difficult for people around you to produce good fruit they want to harvest. You may want to stick to varieties that bloom well, but don't produce much fruit. Just saying.

You're right, of course. We will harvest the fruit, but that's not our goal. But, who knows, we may just become as interested in the fruit as the bees and birds.

I would suggest you plant fruit tree varieties that you and your family love to eat. The critters won't care that much and you may change your mind. And if you list your property for sale having varieties that your buyer would like may be to your benefit. Otherwise having crab apples even with all their blossoms ....and thorns may scare buyers away.

I would say from my experience here that deer love apples much better than peaches. When I trim the trees I leave the cuttings for the deer, but they leave the peach cuttings untouched. The birds would love a cherry tree And you might want to grow trees that come ripe over an extended period of time.

If you really want to attract birds and pollinators, then plant natives rather than cultivated orchard fruit trees. Especially if you do not care about harvesting edible fruit for yourself. Skip the apples, pears and cherries - instead choose amelanchiers (serviceberries), elderberries, aronia, native hawthorn, hollies, viburnums, chokecherry, dogwoods.

Or plant berries - raspberries, blackberries and blueberries are all native to North America.

Orchard trees need considerable care to be productive - annual pruning, routine spraying for insect or disease control, and typically a need for cross pollination to provide fruit. Native plants seldom require any of these measures and are better adapted to a wide range of climate, planting and growing conditions.

Yes native is the way to go and many of them make good fruits too, mostly berry types but also persimmon and paw paw if they survive your zone
