I would wait on a backsplash choice until more is done, such as cabinets and counters.

I would choose cabinets first, then counter and last the backsplash.

Pick your cabinets and counters first, then decide what you want for the back splash. If you want the backsplash and the counters the same solid material, then I'd go with the lighter color. That will mean you'll probably want your cabinets to be painted some other color, e.g. a light sage or taupe. Don't go with stained cabinets for these materials. It will turn out looking too one-note, IMO.

Agreeing with others, but want to add. Not only is backsplash choice last, but it also should not be chosen until after everything else is installed. Everything looks entirely different after it is installed, and if you choose your backsplash before that, you will make a mistake.

Don't worry about not having your GC still available for the backsplash after everything else is installed. You will actually get a better backsplash installation if you hire a tile installer yourself. Remove the backsplash from the GC's scope of work, and hire someone yourself later to install it.
