Saving onions for seeds

When saving onions for seed, I know they won't produce seed until next year. My question is, do I leave the onions I want seed from in the ground and let them stay all winter (I live in zone 7b) or do I pull them up and replant them in the fall or spring? Also, do I trim the stems off like I do for the ones I'm going to eat?
