We are remodeling downstairs its gonna be an open floor plan with the outdoor-indoor concept, so mainly deciding between engineered wood or vinyl.

Neither can go outdoors. What do you mean........indoor outdoor. If you will open doors to an partially enclosed outdoor living space.......the outdoor space is separate from indoor space. No matter where you live

Your living/kitchen is separate from the exterior. People have entered on to either surface , engineered wood, or sand on site hardwood for hundreds of years. Walk off mats for soiled or wet feet.
