First you do not choose backsplash before counters IMO polished granite is a much better choice than quartz and more eco friendly than resin ever. IMO bullet proof and there are some really nice white/ gray granites but polished is always the best with natural stone .Glacier white ans White river are two really awesome ones The bottom one is White river

Any chance of seeing your finishes, or of seeing an inspiration picture that captures what you're going for? Kind of a large space of options, hard to narrow...

I was looking at the LG Viatera Karis or Muse as a front runner, though, again, I am still interested in a less glossy finish if there's a viable option.

There are a lot of options. It's not at all like marble, but in my last kitchen I had ceasarstone Nougat, which has an off-white and gray pebble pattern. I had it with medium gray cabinets and white subway tile, and it was a nice and bright, but also didn't show crumbs or smudges since it had a pattern. I found it very easy to clean and maintain. There are a lot of patterns more less like it. Ultimately the best picks will depend on your cabinets. Be sure to order samples.
