I would suggest three things:

1. If you have not done so already, read Breed Your Own Vegetable Varieties by Carol Deppe.

2. You can make your favorite hybrids into open pollinated varieties.

3. You can take two stable inbred OP varieties and cross them to make a hybrid.

It is relatively easy to make hybrids with tomatoes. The problem will be that you have to pick two really good parents to make anything worthwile. Start with a good flavored tomato. Cross it with a disease resistant tomato. The combination should give some disease resistance with decent flavor. I'll give a couple of examples of good parents.

Tropic – is a relatively disease resistant open pollinated tomato

Akers West Virginia – is a very good flavored tomato

Eva Purple Ball – is a highly productive tomato with some disease tolerance

Box Car Willie is a good flavored large red tomato
