I doubt Eglantine would be a dense plant, but you should be able to grow it for the effect you desire. I would warn, though, Eglantine suckers, so expect it to invade the lawn and the rest of the planting areas. I grew it in a pot at a condo I had many years ago. I wanted it for the same reason you do, for the scent to waft into the house. There was space to the right of my front door, on the outside of the five foot fence surrounding my patio area so the pot and its trellis were out in what would be the common area of the building. I tied the trellis to the fence to keep it from blowing down in the winds and had to trim the plant weekly to keep it from invading the entry and out in to the common areas. In windy or hot periods, I had to water it morning and evening to keep it growing well. I used timed release fertilizer in the pot and had to frequently replenish the potting soil as it broke down quickly with the water, fertilizer and heat. The plant grew well and flowered as expected. I had no gall problems as they aren't issues where I grew it (Chatsworth, San Fernando Valley, Los Angeles, CA, Zone 9b). It was arid and windy, so the foliage scent wasn't AS noticeable as I had hoped, but I could rub the new growth tips to enjoy it and in milder evenings, I could mist the plant to obtain the "wafting". You're probably going to need to sheer the plant as you would expect to have to sheer a shrub to "hedge" it to make it conform to the space you want it to, and as long as you don't go over board, removing all of the current growth, you should be rewarded with flowers on the older growth the following season. With any luck, you should also have hips. I think my major concern would be the ability to eradicate it from the area should you decide it wasn't what you wanted after all. This is one of those species which can be quite invasive, particularly if the soil is nicely amended and water and fertility are ample. Otherwise, I think you'll enjoy it. Good luck!
