For the floors, you could go with tile or marmoleum, which is a very durable hard vinyl. I had it at my old house in the mud room, but have seen it a couple times used in kitchens and it looks good. Are the counters laminate? They seem pretty dark, next to the dark cabinets. If you wanted to lighten things up, you could have the counters resurfaced, which costs generally around $2-300, but they will look brand new and you can pick from a variety of colors. It would freshen things up and I think the contrast of a lighter color next to the dark cabinets would look nice.

Linoleum- solid red, blue green. Or checkerboard.
