Sure you can, but you're going to trade inconspicuousness.

@User if you made a pony wall or cabinet-like box to go behind the cabinets, wouldnt that reduce the overhang? There would be less countertop that is unsupported, so I’m not sure why this wouldn’t work, especially if the steel brackets are attached. Would you mind elaborating?

Not necessarily. Simply increase the depth of the top by the width of the pony wall.

The pony wall is unnecessary. You need a custom made tube steel frame to support your top that is let into the cabinets flush with the cabinet tops. It will make the span past the range. Paint it flat black and keep it back from the front edge 6" or so and it will be inconspicuous.

A pony wall adds nothing. You need to build this like a table.

Thanks for the feedback. I am sure this makes no difference but I do have 3/4” end panels (plywood) on either side of the island that span the depth of the countertop, so it has the “waterfall” look but with end panels that match the cabinets instead of continuous countertop. If anyone has any ideas about how to incorporate these to provide additional structure that would be great, because I much Prefer this look over table legs. The good thing about the panels is that it will hide major structural changes I would need to make underneath, since the seating area is “boxed in” so to speak.
