This counter already has a backsplash, it’s 4” high. If you want to add a backsplash that reaches the top cupboards then remove the existing backsplash. Having said that, pick a plain tile since there is a lot already going on with the granite.

Yes it's a busy looking granite. We just wanted to bring it all the way up to under the cabinets. Any tile suggestions?

Tile stores have an abundance of choices for you to bring home. Try some in your space and lighting. Take a sample of your counter and remove a drawer front to help at the store.

Your countertop already has a lot of movement, so I would keep the backsplash more subtle to tone it down. I’d choose a simple tile in one of the lighter colors from the countertop, with grout close to the tile color.

We had the same situation in this Mar Vista kitchen. The countertop is busy, so we used a quieter backsplash that complements it without competing with it:
