Kitchen Countertop Options

We are in the middle of a kitchen remodel and need to pick our countertop. Our cabinets are a medium brown, our floor is a natural stained oak (like the rest of the house, appliances are stainless. Paint is a light beige/taupe color. The rest of our house has stained woodwork and mostly warm tones. We want to make sure to lighten up the kitchen with the countertop and tiles. We do get some western light in the afternoon/evening.

we are leaning toward granite but want one that leans toward light/white colors. We like some movement but not a huge amount....and would prefer to steer away from those that have a uniform pattern.

I've attached 3 pics. The 1st is our floor: unstained red oak. The second is a picture looking from our kitchen into the dining room (left) and the laundry room (right) so you can see examples of current stained woodwork. The last picture is our kitchen cabinets (actually the hood over the stove) with countertop samples. On left is Colonial white granite, at top is a quartz with some dark veining, and on right is River White. At the bottom is current window treatments which are over the sink and staying.

So questions: Is River White too gray for my house and floor? Is Colonial White too tan and not white enough? The quartz is the safe option and might be the best from a color perspective. OR...should we look for something else? One thing I have learned so far is that slabs really vary and I need to be able to see slabs in good light so as to get the best ones. We need approximately 85 sq ft of countertop material.

Thank you in advance@
