Are you going to repaint the ceiling after replacing the fixture? If not, choose an LED fixture with the same footprint. If you plan to repaint, choose a three-bulb LED fixture to ensure you can get the same brightness by choosing the right new bulbs. If you don't want to replace the fixture itself, you can buy LED tubes online or in big box stores that will plug right in where the old fluorescent tubes are. That's by far the easiest change.

Can't help with the light. Add undercabinet lighting and eventually replace the fridge with counter depth one

LEDs under and on top of cabinets might eliminate the need for the ceiling fixture. Or, you can replace the ceiling light with track lighting.
