Thinset on drywall

Let’s start off with ‘I’m an idiot’ type statement. What could have driven me to this decision, I cannot presently say. I gladly accept the likely derision from the community upon my obvious mistake, and hope for a sliver of guidance.

I really just hope it can be salvaged. Here is the situation. 100-year old house kitchen gut, and I’ve installed 5/8“ drywall after shimming the old studs to be pretty level/square. The area in question is above counters and a cooktop, which will have ceramic tile to the ceiling and open shelves.

Then, in a moment of inspiration, an idea strikes me: why not use thinset to level out the drywall joints? Seems reasonable, right? The ceramic tile calls for thinset later so why not slap it on as a leveling agent!?

Well, I’m now staring at it and reading up, realizing this isn’t ideal in the least.

If I lay tile on this wall, is it doomed?

Should i simply re-hang the drywall and start over?
