#1 for sure if you have a high traffic kitchen (esp. with kids & pets) that is also close to an outside access point ~ that style is the easiest to wipe/keep clean. We went with what our cabinet maker called "Manhattan Shaker" which looks like your #1 but with 2 1/4" rails - super easy to keep clean in spite of 2 Goldens and a daily twinado in & out of the backyard.

None of those look Shaker. Shaker cabinet makers would not have used an ogee moulding.

I like the wider rail, and would do the shallow top drawers as slabs, then do 5 piece drawers on deeper drawers below.

True shaker doors don't have a bevel or a bead. The stiles have straight edges with a flat inset panel. Like this:

How faithfully are you trying to make your kitchen "shaker"? It's true that the ogee molding (the extra detail on the inside of the rails and stiles) is not considered shaker - but it is easier to dust than a flat edge.

The 2-1/4" rails and stiles are more traditional for shaker cabinets. The 3" wide ones, IMO, will give you a more modern take. (I prefer 2-1/4", but that's personal preference.)

IMO the less grooves and bevels the better if you want shaker then go the simplest one which is none of the above so look for something like Sabrina shows and I would not do the over the top wood hood in a shaker kitchen.
