Two gives you more options and not as much clutter.

Depends on what you plan to put on these shelves. Will they be functional or primarily decorative? If they're for glassware, for example, I'd go with three. But if you're mostly putting decorative objects on the shelves, e.g. platters, or vases, or photos, I'd go with two.

@Sabrina, it will be mostly decorative since I have plenty of cabinet storage space underneath and on the opposite wall. I’m sure I’ll put a few everyday items on the lower shelf like glasses and plates but I also plan to add decorations and plants.

Be sure to add wood blocking in the wall for the shelf hardware. In our experience the toggle or anchor bolts will eventually pull out or the shelves will start to peek away from the wall.

BTW my vote is for 3 shelves as odd numbers things look best (to me)
