Fireplace remodel

We would like to remodel our fireplace. It's not built out at all which seems a bit unusual. The surround is this horrendous faux wood tile. I want to keep it budget friendly but also want a nice focal piece for the room. We are considering stone veneer with a distressed wood mantel like the picture below - stone going all the way up. In that photo the fireplace is flush against the wall and they did not build out the face like the other option below - is that okay or does it look silly? It would add on a lot more money and work, obviously. Another option could be panel moulding pictured below, although it is a bit traditional for our more modern eclectic style. I definitely do not want to do shiplap. Thanks so much for any advice you've got!
