I really think cabinets to the ceiling are the way to go. I think it looks so weird to have the space above cabinets.

Your "must have" of refinishing the existing cabinets does not allow changing much of the layout. But anything can be done with an appropriate budget. As far as layout, the angled island may be necessary based on your circulation route in the adjacent rooms (can't see). The corner pantry, or at minimum the plant shelf above, is doing you no favors. "Cabinets to ceiling" should be thought about where and why, as you have high vaulted ceilings (the uppers already look like 42").

Goodness, that's a pretty kitchen. What is there that needs changing? (kitchen envy here)
