It's a small kitchen, the 4" cans approx 3'-4.5' apart are sufficient for general lighting, and placing at the edge of counter like you've shown will light the counter without your shadow as well as throw onto the floor. If you choose undercab lighting that will light the shaded space along the backsplash caused by the upper cabinets. If you have stainless ref & hood you will get sort of a "hotspot" and reflection from the cans, but all you can do is move them out a little like you have shown because you need the general light at those locations.
