I have walnut butcherblock that has a single coat of osmo top oil (the installer didn’t do enough) and it’s wearing down.

should I simply apply more top oil? Should I switch to polyx? If I do switch do I need to sand it down to bare wood? i don’t think I have the time to do waterlox. I’ve heard it can be hard for top oil to penetrate walnut unless i use the flurry sanding technique
