broccoli looks weird

a week ago my broccoli looked normal but small, so I decided to let it grow more. now the flourets are long and skinny. will it return to normal? is it ok to eat it now? see pics below of it now (don’t have one from before)

looks like its bolting to flower and seed .. probably should have harvested it last week ...

might also have bug issues.. or the dog is eating it.. like in the last pic ...

It won't go back... the flowers are going to open soon. Yes you can eat now. Harvest ASAP.

Yes, you should have picked it a week ago. I assume you live in a warmer climate, and as the temps go higher as the days get longer the broccoli will grow like that and flower, so you need to pick at the right time. If you grow in Autumn, with temps getting cooler, broccoli will be slower to flower and stay tighter longer.

Head size doesn't determine when it ready to pick, some plants will produce a "buttoned up" head which is small and it won't enlarge in size before it bolts. I judge my heads by cupping my palm around them giving each a slight squeeze. If it's still hard and compact it can grow some more. If it has a slight sponginess to it then it's time to pick it before it bolts.
