Sizing Pendant lighting

Hello and thank you in advance for your time,
I'm currently remodeling my kitchen 258" X 240" with an additional section for refr/freezer of 67" X 127". My island is 61' X 128" BUT our ceiling height is 8 feet.
What are you professional recommendations on pendant lighting dimensions over the island?

I would want the ceiling light fixtures over the island to be higher than the than the head of the tallest resident. An 8’ ceiling may be too low for any lantern-type hanging fixtures.
