Need grape pruning advice, please?

I let this grape grow out of control on an arbor the past 2 years - although I did cut it back each winter, I didn't really cut it back as fully as I should have. This year, because I want to exchange the arbor for a more traditional grape trellis (easier to net and hope to get more grapes), I would like some advice on where to do the final cuts to start it back to good form. You can see that I have already cut it back by about 2/3. Where would you go from this point? which stems to remove, which to leave?

The vine looks good for cane pruning already, your main canes could be the one out the left, and the one out the right. The middle cane is mostly for back-up or for a 'headed design'. this cane could be cut off flush if you want. Use a wound sealant on the cuts, and check the cuts again in a week to make sure sap has not pushed away the wound-paint, if required re-apply. Use a wood conditioning spray at this time, copper and spray-oil in combination or a Lime-Sulphur would be a second choice.

Thank you Benjamin, that is exactly what I needed!

I have a copper spray so will use that. I had a fungal infection on it a couple of years ago but no reoccurrence with the spraying I've done since.
