Bluestar French door ovens

Does anyone here have Bluestar French door ovens of recent vintage? Is the fan really noisy? I've read that it goes on forever after cooking.

More importantly perhaps, are there any issues about opening the doors wider than 90 degrees? My cabinet guy is worried about the doors not being able to open fully, or dinging up the cabinets if we try to open them beyond 90 degrees. We do have a spacer of about 1.5" on either side of the oven, but we will have a Sub-Zero fridge and freezer on either side of the oven, with the handles on the oven side and also wondering if those will get hit.

Would love the convenience of the French door model, but wondering if I should just go with the traditional drop-down.

I can’t answer the specific Blue Star questions but I do have a Cafe French Door oven next to a Sub Zero Pro 36. The space between is 3 1/2 inches. I cannot open both at once as the doors would hit. Not sure why I would ever need to do that though.

The hinges on both the oven and fridge are such that they do not swing out when opening.

I will comment on french door ovens in commercial kitchens they are the source of more burns that can imagine I also hope you do not mean you have a fridge on one side and the freezer on the other side of the oven. Your contractor is correct to be concerned about the opening all the way which BTW is the only way to use these ovens.

Thank you both for your input. I don't plan on opening the oven at the same time as the fridge, so that problem solved!

Patricia, I imagine people burn themselves on both types of ovens, but I usually use mitts, so should be OK with the French door style. Agree that I want to be able to open the doors more than 90 degrees, which is why I posted this question, for information from people who already have these things. And yes, there will be a full size fridge on one side and freezer on the other. We currently have an oven next to a fridge and haven't suffered.
