kitchen backsplash around window

What are your opinions about this? We will be doing quartz backsplash. Using our counter material to go up to the bottom of the cabinets. My question is, what about the window sill? Contractor suggested making a ledge out of the quartz and wrapping it into the sides of the window. They took off the casing. But another option I guess would be to do casing and then quartz along the wall only? Fabricator was going to do a ledge to the right of the window and we were thinking of white oak open shelving also to the right side... thoughts???

Also, the opposite wall is small (peninsula side). We were thinking of leaving it just how it is, no backsplash but just put open shelving that wraps around. It's such a small area.. do you think we should do quartz backsplash as well? We just don't want it to "stick out". Fabricator mentioned he could wrap it around the corner...

And, the peninsula overhang can go up to 16 inches because of waterfall edge. We settled on 15 inches, there is a fireplace that shares that wall so didn't want it to extend too far out. Is this ok?

What about thickness? is there a way to make the quartz backsplash thinner or will it be just the size the quartz already comes?
