Wood finish help!? Poly over soap?

I am finishing a rift sawn white oak desktop. I really like the raw wood unfinished color and look. (Don’t really care about the feel) I am concerned about yellowing. I am also concerned about uv protection as it will be directly in a window. Having done some research I came upon soap finishes and I love the look. However, I’m concerned about the level of uv protection. Could I increase the durability/ UV protection by adding one or two coats of a flat/matte water based polyurethane over the soap finish? I don’t want it to look plasticky but I’m trying to balance the look of the soap finish and the durability of the poly.
