I like plumbing to be all on one wall when possible

really doesn't matter. if it's an existing build, you have to work w/where the plumbing is, or pay to move it.

New build, and you have the option, put it wherever you like it.

normally you want to be able to reach in and turn on the controls. so if it's next to toilet, can you do that? what about glass doors? will they be in the way?

I hate shower curtains, so I'd be more concerned about that.

@Beth H. :thanks so much. the concern is not having enough space to step into the tub. what do you think about the plumbing on same side of wall [option 2] with a hinged shower door? or would a fixed glass door be better?

you'd have to have a fixed panel on the left, with a door that swings on the right side. So, yes, that would work.
