Check into media blasting to get it back to the original color. Then stain it if you wish, or simply seal it.

You have a lovely home. Our home was built in 1989 and has similar shingles. They were in bad shape and we replaced them. We stained them before installing.

Solid color stain will give you a consistent finish without hiding the texture. Paint will provide more long term protection though.

I think replacing any you don't like the color of or that are bad on your cedar is a great suggestion by @rustynail.

For other changes, I think painting the siding, I would go with a sagey green like below. Some carriage style wood doors and lights to finish it off. Note wood stains should all match (examples do not)

I find the areas of brick (entry & single car garage) to be "one material/color too many". Suggest you color it to match the mortar used around the stone if you don't paint the body. OR to match the new body color if you decide to paint the siding. https://romabio.com/

Your home reminded me of this house in a similar color scheme.

I like the color scheme in the house BeverlyFLADeziner posted. Think about doing a darker color on the trim. Paint the sidelights either the trim color or the siding color. Right now they stick out.

I would prune back hard the couple of bushes that are hiding the first floor windows. You could put shutters on just those two. Think about removing the large bush to the left of the front door. Plant several lower growing evergreen and add some perennials and annuals.
