Awkward space behind cooktop - material advice

I just replaced my outdated brown countertops with a beautiful quartz - yay! We're also painting the cabinets greige. I had planned to take the quartz material behind the cooktop but the fabricator said it wasn't possible due to the thickness and cooktop. I am now stuck trying to figure out what to put behind the stove. I like the look of marble tiles in a similar white with gold/grey veining or the imperfect ceramic tiles that are kind of trending, but I don't want it to be too busy by introducing another material. I thought about just doing drywall because it would be consistent and clean, but am also not sure drywall is the most practical choice. To make matters worse it's not a perfect square and has those awkard jut-outs due to the window, so really anything other than something extremely neutral that just blends in will look a bit awkward. Please help!
