pendant/lighting help

We bought a house (not custom) about 6 mo ago and I'm struggling with lighting as it's an open concept house. I want to change the lighting in the family room to replace the ceiling fan we never use because it dries out my hubby's eyes.

We currently have 3 pocket LEDs where the pendants will go. Every light I find that I like seems to be too large (my island is 90" wide and 56" deep at the largest point, it curves in the front). According to my calculations I shouldn't put in a light larger than 12". (Many I like are 15-17")

I am now thinking of putting in an island chandelier type light instead of 3 different ones. What can I do with those 2 lights? Can I put a cover of some kind of them? I don't want to have them permanently closed off in case I want to go back to the three.

Thoughts?

PS-I know that sign above my cabinets is crooked. I just stuck it up there to get it off the ground. We will decorate that eventually or not at all. Haven't decided. Backsplash is coming Monday-after a 6 mo wait because they received the wrong color tile.

Help is appreciated. Thanks.
