butchers block maintenance

I recently had a walnut, edge up butchers block counter installed on my kitchen island. The island has a bar sink that gets very light use. The wood worker that made the top used Rubio mono coat oil on the top after staining. I question whether this is enough to protect the top from any minor standing water that might come from the sink but he was adamant that not additional sealant is not necessary. In any event, I’m wondering what sort of short term and long term maintenance I need to be doing to the top to keep it in good shape. Additional oil applications, etc? Thanks in advance for you help!!!
