The stainless hood, integrated into the cabinetry, hands down. It’s always a mistake to have a chimney type hood with open space around the upper part, and not have open space around the lower part. A hood like that needs more negative space overall.

Yes, the scale is an issue for any large range with a low ceiling. Consider moving to a 36” instead of a 48”. Add a second smaller steam oven elsewhere if you need multiple oven options.

Option C- range hood that looks like the cabinetry. I'll see if I can find and link pics, I know I've seen them here recently.

I would either go with the stainless range hood or as stated above and option C - Get a mantle hood that matches the cabinets. A large chimney hood like that always looks squatty on an 8 ft ceiling

I prefer a metal hood with an 8’ ceiling, for the reasons already mentioned. Also, the cabinetry hoods are always made too shallowly, like 19-20”, so they dont exhaust the front burners. They’re also harder to wipe clean than metal. Here are some pics:
