We have the same size nook and layout next to the kitchen. We have a 60” round table that extends about a foot further than the adjacent counter with the sink. It’s plenty of room and doesn’t feel at all in the way.

The chain to the light fixture sits 59.5” from the far bank of windows.

Sorry…I double checked my husband’s measurement on the table…it’s 54” not 60”.

Not sure if there's enough room but what about building window benches all around and then having a rectangular farmhouse table with a long bench on the kitchen side? You could add storage under the benches.
